Birthday Fruit Cake by Lynda
6oz/170g Butter or margarine
5oz/140g Castor Sugar
1oz/30g Brown Sugar
3 Large Eggs
4oz/115g Plain Flour
4oz/115g Self Raising Flour
½ tsp. Mixed Spice
1oz/30g Plain Chocolate drops
Cream Butter & Sugar together until light and fluffy. Beat in the eggs one at a time.
Sieve together the flours and spices and fold into the butter mixture. Stir in fruit and chocolate drops.
Spoon into a greased and lined 7 inch deep cake tin. Bake in a preheated oven at 130C Fan for 1.1/2 – 1.3/4 hours. Remove from oven and leave in the tin for 5 mins.
Or till cool.
Turn onto a wire cooling tray. Remove greaseproof paper and leave to stand until cold.
Can be decorated with Royal Icing.
