This is a recipe I got off Blue Peter in the mid 1980's and first made with my grandmother. It is a fat free firm tea bread, and very simple to make. The cup used is not a typical kitchen measuring cup, but a teacup (rather than a mug). Lovely sliced with a bit of butter on it. You can add spices or use earl grey tea for an alternative.
Ingredients:
2 cups raisins
1 cup sugar (soft brown is best, but you can use any)
1 cup hot strong black tea
2 cups self-raising flour
1 egg
Method:
Put sugar and raisins in bowl. Pour over the hot tea, and leave to soak for 15 minutes.
Stir in the flour. Beat in the egg.
Put in a two pound loaf tin, and bake in a preheated oven at 190C until a skewer comes out clean (about 45-50 minutes).
